Warm goat’s cheese salad

For 4 people
400 grams of gizzards
1 lettuce salade
2 fresh goat’s cheeses
2 eggs
8 tablespoons of breadcrumbs
8 tablespoons of olive oil
4 tablespoons of balsamic vinegar




→ Cook the gizzards, then fry them for a few minutes in a pan. In the meantime, coat the goat’s cheeses in the beaten eggs and breadcrumbs.
→ Wash the lettuce and season it with 3 tablespoons of olive oil and tablespoons of balsamic vinegar. Pan-fry the goat’s cheeses in a little olive oil.
→ Serve in a large plate. Place the lettuce in the centre, then add the gizzards and goat’s cheeses on top. Can be enjoyed as a starter or main course.
