Coconut chicken

 

 

Ingredients

For 3 people

 

400 g of chicken breasts
2 tablespoons of Coconut oil
3 tablespoons of curry powder
1 green pepper and 1 red pepper
150 g of bamboo shoots
1-2 crushed garlic cloves
5 dl of unsweetened coconut milk
Freshly-chopped lemongrass
1 cube of chicken stock
Salt & pepper
1 red chilli pepper
1 onion
 

Recipe

 

→ Cut the chicken breasts into strips.
→ Melt the coconut oil on high heat in a pan, then quickly brown the chicken.
→ Lower the heat and add the curry, deglaze with some of the coconut milk and leave to simmer to 20 minutes.
→ Add the peppers, bamboo shoots, garlic and lemongrass. Deglaze with the rest of the coconut milk, add the chicken stock cube.
→ Season to taste with salt, pepper, the red chilli and the coriander. Leave to simmer on low heat for 5 minutes.
→ Serve in a large dish or directly on a plate with rice, scatter some onions on top.
